Christmas Recipe – GRILLED BEEF BAGUETTE September 20, 2007

Caramelized Onions:
2 tablespoons olive oil
12 fresh sage leaves
2 cups sliced Spanish onions
2 tablespoons cherry vinegar
salt and freshly ground pepper

Horseradish Mustard:
1/2 cup Dijon mustard
1/4 cup horseradish

1 teaspoon chopped garlic
1 tablespoon Worcestershire sauce
2 tablespoons olive oil
1 pound beef filet
1 baguette
1 cup shredded arugula

Heat oil in skillet on medium heat. Add sage
leaves and fry until crisp, about 1 minute.
Remove and drain on paper towels. Add onions
and cook for about 10 minutes, stirring frequently,
until golden and softened Pour in sherry vinegar,
bring to boil and reduce until vinegar disappears.
Season with salt and pepper and reserve along
with sage leaves.
Combine Dijon mustard and horseradish in a bowl.
Remove ¼ cup mustard-horseradish mixture and
combine with garlic, Worcestershire and 1 tablespoon
olive oil. Spread all over filet. Season with salt and
pepper.
Preheat barbecue to high and sear filet all around until
golden, about 8 minutes. Close lid and bake for another
15 to 20 minutes or until rare. It continue to cook as it
cools. When cool, slice thinly.
Cut a baguette in half horizontally and cut each portion
in half. Brush with remaining olive oil and grill each side
lightly, about 2 minutes per side.
Brush bread with reserved horseradish mustard, add
caramelized onions, beef and arugula. Garnish with sage
leave. press down and serve.
Serve 4
