Angel Angel Food Coconut Cream Cake Christmas Recipe December 18, 2008

Angel Food Coconut Cream Cake

1 (8- or 9-inch) purchased round angel food cake
1 (21 ounce) can coconut pie filling
1 (8 ounce) container frozen whipped topping, thawed
2 tablespoons coconut, lightly toasted

Split cake horizontally to make 4 layers. (To split, mark side of
cake with toothpicks and cut with long, thin serrated knife.) Place
bottom layer on serving plate; spread with 1/3 cup of the pie
filling. Repeat with 2 more layers. Replace top cake layer. Frost top
and sides of cake with whipped topping. Sprinkle top with coconut.
Store in refrigerator.

Makes 12 servings.

 

Red Velvet Cake Recipes December 25, 2007

Red Velvet Cake

Ingredients:
4 tablespoons cocoa powder
1 ounce liquid red food color
3/4 cup water
1 pudding-type cake mix (white or yellow)
4 eggs
1 teaspoon vanilla
1 teaspoon butter flavoring
4 tablespoons buttermilk powder
1 tablespoon white vinegar

Directions:

Heat oven to 325F.

Mix together cocoa powder, red food color, and a small amount of the water forming a paste. Add remaining ingredients except vinegar. Mix 2-3 minutes on medium speed until well blended. Add vinegar and blend completely. Pour batter into prepared 9″ x 13″ cake pan and bake for approximately 35 minutes or until toothpick inserted in center comes out clean.

 

Fruitcake Recipe December 20, 2007

5 eggs

1/2 lb. butter

1 C. sugar

1 3/4 C. flour

1/2 tsp. baking powder

1 lb. candied cherries

1 lb. candied pineapple

4 C. chopped pecans

1 T. vanilla

1 T. lemon extract

Cut cherries into 4’s, cut pineapple into chunks. Cream butter and add

to sugar slowly. Beat eggs then add to sugar mixture; add flavorings to

sugar mixture. Sift flour, measure, then sift again with baking powder.

Place cut up fruit into flour mixture and stir fruit to coat it. After

coating fruit, gradually add fruit/flour mixture to sugar mixture until

all is combined. Pour batter into 2 greased and floured loaf pans.

Start fruitcakes in a cold oven set to 250F. Bake 2 to 2 1/2 hours.

Makes 2 loaves.

Christmas Cake December 3, 2007

Christmas Cake

1 cup plain flour
1 cup chopped nuts and glace fruits
3/4 cup brown sugar
1/2 cup ghee*
1 tbs cocoa powder
1 tbs golden syrup
1 tsp rose water
1 tsp orange essence
1/2 tsp nutmeg powder
1/2 tsp cardamom powder
1/2 tsp cinnamon powder
1/4 cup rum
1/4 cup orange juice
1/2 tsp baking powder
1/2 tsp baking soda
2 eggs

* Available in any Indian grocery shop.

Sieve plain flour with cocoa, spice powders and baking powder and
baking soda.  Beat ghee and brown sugar till fluffy.  Beat in the eggs
one at a time.Mix rum, essence,rose water and orange juice.  Fold in
the flour mixture and rum mixture alternately till well mixed.  Bake
in a greased and floured 8″ tin at 180C for 30-35 minutes.

 

chocolate cake recipe – Vanilla Buttercreams October 11, 2007

Vanilla Buttercreams
Ingredients:
2 lbs. Confectioners”s sugar
1/4 lb. Butter, softened
1 ( 8 oz. ) pkg. Cream cheese, softened
1/2 tsp. Vanilla extract
Chocolate chips, or chocolate wafers (for molded candy)

Cream butter and cheese, slowly add sugar and vanilla and mix well. Pinch off
small pieces and form into a round shape and refrigerate overnight. Melt your
chocolate carefully in a double boiler. Dip in melted chocolate. Store in
refrigerator but serve at room temperature.

Spiced Apple Cake Mix In A Jar October 9, 2007

3 cups all-purpose flour
1 1/2 cups sugar
1 1/2 tsp. baking soda
1 tsp. powdered vanilla
1 1/2 tsp. cinnamon
1/4 tsp. ground nutmeg
1 cup chopped nuts
1/2 cup golden raisins

Combine and blend ingredients in a medium bowl.
Store in an airtight container.
Attach this to the Jar:
Spiced Apple Cake
Serves 8 to 10

1 package Spiced Apple Cake Mix
1 1/2 cups canola oil
3 large eggs
3 cups chopped apples

Preheat the oven to 350 degrees F & grease a tube
or Bundt pan. Place the Spiced Apple Cake Mix into
a large mixing bowl. Make a well in the center of
the Mix; add the oil, eggs, and apples. Stir until
mixture is smooth. Pour into the prepared pan
and bake for 1 hour & 10 minutes, or until a toothpick
inserted into the center comes out clean. Cool;
remove from the cake pan.

 

Sugar Free Cream Cheese Fudge September 6, 2007

Healthy Christmas Recipe

16 ounces cream cheese, softened
2 ounces unsweetened chocolate (squares)
1/2 cup sugar substitute (Equal, Aspartame, Splenda)
1 teaspoon vanilla extract
1/2 cup chopped pecans

In a small mixing bowl, beat the cream cheese, chocolate, sweetener
and vanilla until smooth. Stir in pecans. Pour into 8-inch square
baking pan lined with foil.

Cover and refrigerate overnight.

Cut into 16 squares. Serve chilled.
