Christmas Berry Jelly March 17, 2008

Christmas Berry Jelly

2 cups apple juice
1/4 cup lemon juice
1/2 cup cinnamon imperials (red hots)
3/4 cup water
1 teaspoon red food coloring
1/4 teaspoon Mace
1 box powdered pectin
8 whole cloves
1 stick cinnamon
4 cups sugar

Prepare home canning jars and lids according to manufacture’s instructions. Jars must be covered with water and boiled 10
minutes to sterilize. Combine apple juice, lemon juice, red hots, water, food coloring, mace and pectin. Tie cloves and
cinnamon stick in a spice bag. Add spice bag to juice mixture. Bring mixture to a boil, stirring constantly. Add sugar, stirring to dissolve. Bring to a rolling boil. Boil hard for 2 minutes. Remove from heat and skin foam, if necessary. Carefully ladle hot jelly into hot jars, leaving 1/4″ head space. Wipe jar rim clean. Place lid on jar with sealing compound next to glass. Screw band down evenly and firmly. Do not use excessive force. Process jelly 5 minutes in a boiling water canner.


Fruitcake Recipe December 20, 2007

5 eggs

1/2 lb. butter

1 C. sugar

1 3/4 C. flour

1/2 tsp. baking powder

1 lb. candied cherries

1 lb. candied pineapple

4 C. chopped pecans

1 T. vanilla

1 T. lemon extract

Cut cherries into 4’s, cut pineapple into chunks. Cream butter and add

to sugar slowly. Beat eggs then add to sugar mixture; add flavorings to

sugar mixture. Sift flour, measure, then sift again with baking powder.

Place cut up fruit into flour mixture and stir fruit to coat it. After

coating fruit, gradually add fruit/flour mixture to sugar mixture until

all is combined. Pour batter into 2 greased and floured loaf pans.

Start fruitcakes in a cold oven set to 250F. Bake 2 to 2 1/2 hours.

Makes 2 loaves.

Christmas Recipes – English Christmas Cookies December 18, 2007


2 c. brown sugar

2/3 c. shortening

2/3 c. milk

3 eggs

1 tsp. salt

3 tsp. baking powder

1/2 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. cloves

1 c. raisins

1 c. pecans

Cream the shortening, adding 1 cup sugar, gradually. Beat the eggs

very light and the remaining sugar and combine the mixture. Sift 2

cups flour with baking powder, salt and spices. Add alternately with

milk. Add the fruit and nuts dredged with flour and enough flour to

make a stiff dough. Drop by teaspoons on greased baking sheet. Bake

in moderate oven until golden brown.


Christmas Recipes – Popcorn Candy Clusters December 17, 2007

Popcorn Candy Cluster Recipe
1 cup freshly popped popcorn
1 cup (8 oz.) semi-sweet chocolate chips
1 cup nuts

In a saucepan, melt chocolate chips. Add popcorn and nuts and stir
until they are well coated. Drop by spoonfuls (clusters) onto a
cookie sheet or wax paper and let set until firm. If you are in a
hurry to eat these, chill the clusters in the freezer for five
minutes. When firm, store in plastic bags.


Christmas Recipes – Christmas Fudge December 16, 2007

Christmas Fudge
2 cups sugar
1 cup light cream
1/4 cup butter
1/4 cup light corn syrup
1/2 teaspoon salt
1 cup marshmallows, miniature
1 teaspoon vanilla extract
1/2 cup pecan halves
1/3 cup candied cherries, chopped
1/3 cup green candied cherries, chopped

Combine sugar, cream, butter, syrup and salt in a heavy saucepan.
Bring to a gentle boil over low heat. Cook, stirring constantly,
until sugar melts. Continue cooking, stirring occasionally, until
mixture reaches 240 degrees on candy thermometer. This is the soft
ball stage. Remove from heat; stir in marshmallows and vanilla.

Stir until marshmallows melt and candy starts to lose its gloss. Stir
in pecan halves and chopped cherries. Continue stirring until candy
starts to set.

Pour into buttered 8-inch square pan. Cool, then cut into squares.

Christmas Recipes – Quick and Easy Popcorn Balls December 15, 2007

Quick and easy popcorn ball Recipe
3 oz. Jell-O (any flavor)
1 cup sugar
1 cup corn syrup
4 quarts freshly popped popcorn
Cook the first three ingredients, bringing to a boil. Pour over
popped corn. Quickly shape into balls with buttered hands.
