Swedish Meatballs (microwave recipe) September 26, 2007

1 lb. ground beef
1 egg
½ C. dry bread crumbs
½ C. milk, divided
1 sm. onion, finely chopped
2 tsp. parsley flakes
½ tsp salt
1/8 tsp allspice
1/8 tsp. pepper
1 (10 ¾ oz) can condensed golden mushroom soup

Combine ground beef, egg, bread crumbs, ¼ cup of the milk, onion, parsley, salt, allspice and pepper. Shape into 1¼ inch meat balls (about 20) Arrange in an 8 inch square baking dish; cover with waxed paper. Mix soup and 1/4 milk and pour over meatballs, cook covered, at HIGH, 14 minutes, or until heated through.

Yield: 20 medium size, or 35 smaller meat balls


Glazed Ham Balls September 15, 2007


1 beaten egg
3/4 cup soft bread crumbs (1 slice)
1/3 cup dried tart red cherries or dried cranberries, finely snipped
1/4 cup finely chopped green onions
1/4 teaspoon pepper
1/2 pound lean ground cooked ham
1/2 pound lean ground beef
2/3 cup red currant jelly
2 tablespoons prepared mustard
Green onion slivers


1. Combine egg, bread crumbs, cherries or cranberries, chopped green
onions, and pepper in a mixing bowl. Add ground ham and ground beef;
mix well. Shape into 1-inch balls.
2. Place in a 15x10x1-inch baking pan. Bake in a 350 degree F oven
for 15 to 18 minutes or until done. Drain, if necessary.
3. Meanwhile, heat jelly and mustard together in a chafing dish,
blazer pan, or small skillet, stirring occasionally until jelly is
melted. Add ham balls to chafing dish. (Or, transfer ham balls to a
warm heatproof serving bowl and pour glaze over ham balls.) Keep
warm. Garnish with green onion slivers. Makes 48 meatballs (48
appetizer servings).


Christmas Appetizer Recipes – Barbecued Meatballs July 14, 2007

A quick and tasty appetizer idea for Christmas, Thanksgiving, or any other holiday. 

Barbecued Meatballs     

      3 pounds ground beef
      1 (12 ounce) can evaporated milk
      1 cup oatmeal
      1 cup cracker crumbs
      2 eggs
      1/2 cup chopped onion
      1/2 teaspoon garlic powder
      2 teaspoons salt
      1/2 teaspoon pepper
      2 teaspoons chili powder

      BBQ Sauce
      2 cups catsup
      1 cup brown sugar
      1/2 teaspoon Liquid Smoke
      1/2 teaspoon garlic powder
      1/4 cup chopped onion

To make meatballs, combine all ingredients (mixture will be soft) and shape into walnut-size balls. Place meatballs in a single layer on wax paper-lined cookie sheets; freeze until solid. Store frozen meatballs in freezer bags until ready to cook.

To make sauce combine all ingredients and stir until sugar is dissolved.

Place frozen meatballs in a 13 x 9-inch pan; pour the sauce over. Bake at 350 degrees F for 1 hour.

Makes 80 meatballs.
