Cinnamon Pancakes in a Jar October 6, 2007

Dry Mix Ingredients
3 cups all-purpose flour
4 teaspoons ground cinnamon
2 1/4 tablespoons white sugar
2 tablespoons baking powder
1 1/4 teaspoons salt
To Make Batter Combine 1 1/3 Cups Dry Mix With the Following:
3/4 cup milk
1 egg
2 tablespoons vegetable oil
DIRECTIONS:
In a quart jar, combine all ingredients in layers, placing flour on
bottom,
then cinnamon in middle and other ingredients on top. Place seal on
jar.
Store in a cool, dry place up to 6 months.
To make Batter for Cinnamon Pancakes: In a medium bowl, combine
milk, egg,
vegetable oil. Whisk in 1 1/3 cups prepared Dry Pancake Mix until
moistened
but still lumpy.
Heat a lightly oiled griddle or frying pan over medium high heat.
Pour or scoop the batter onto the griddle, using approximately 1/4
cup for each pancake. Brown on both sides and serve hot.

POTATO PANCAKES VONNAS WITH SMOKED SALMON September 13, 2007

3 lg Idaho Potatoes, peeled and
-diced
2 tb Corn starch
2 Whole eggs
4 Egg whites
1/4 c Heavy cream
-Salt and pepper to taste
1 tb Lemon juice
1/4 c Creme fraiche or sour
-cream
6 lg Slices of smoked salmon
1 4- ounce jar of osetra
-caviar (optional)
-dill sprigs for garnish

Cook three large, peeled and diced potatoes in salted water When
cooked, pass potatoes through a food mill or sieve with fine holes.
Place puree in electric mixer with a paddle attachment. Add corn
starch to mix thoroughly. Slowly incorporate eggs and egg whites,
then heavy cream. Season with salt and pepper to taste. Meanwhile,
in a small bowl, stir the lemon juice into the creme fraiche. Set
aside.
Preheat non-stick skillet over medium heat. Spoon the pancake mixture
into skillet, keeping a round shape (silver dollar size). Cook for
90 seconds, then turn and cook until done. Place pancakes on plate
and serve with one slice of smoked salmon, one tablespoon of the
reserved creme fraiche mixture and a heaping teaspoon of caviar.
Garnish with dill and serve.

Christmas Bread

1 c Nonfat milk
1/2 c Sugar
2 pk Yeast
1/2 c Warm water (105 115’F.)
1/2 c Nonfat egg substitute
1 ts Vanilla
1 1/2 ts Salt
6 c Flour
1 Grated lemon zest
1 c Mixed candied fruit
1 c Golden raisins
1 tb Butter, melted
Powdered sugar
Red candied pineapple

Heat milk and sugar in saucepan to scalding, then cool to lukewarm.

Combine yeast and warm water in mixing bowl, stirring until yeast is dissolved.

Add cooled milk mixture to yeast mixture in mixing bowl.

Stir in egg substitute, vanilla and salt. Beat in 3 cups of flour and lemon zest.

Beat in remaining flour to make soft dough.

Knead in mixed candied fruit and raisins.

Knead about 10 minutes, until smooth and elastic.

Put dough in greased bowl and let rise in warm place until doubled in bulk, about 1 hour.

Punch down. Divide dough in half. Roll first half of dough on lightly floured surface into oval about 1/4″ thick.

Fold in half lengthwise. Place on greased baking sheet. Brush with half of melted butter.

Repeat with second half of dough.

Cover loaves and let rise until doubled, about 45 minutes.

Bake at 375’F. 25 30 minutes, until golden brown.

Let cool to warm.

Sprinkle with powdered sugar and decorate with candied pineapple or cherries.

Makes 2 loaves, or 16 servings.

Blueberry-Filled Dutch Pancake Recipe May 20, 2007

Blueberry-Filled Dutch Pancake Recipe

1 Tbs butter
3 eggs
1/2 cup skim or lowfat milk
1/3 cup all-purpose flour
3 Tbs sugar, divided
1/4 tsp salt, optional
1-1/2 cups fresh or frozen blueberries (thawed and drained if
frozen)
1/4 tsp ground cinnamon
1/2 cup sliced bananas

Preheat oven to 450 F. Place butter in a 9-inch pie plate or a 9 or
10-inch ovenproof skillet*. Melt butter in oven, about 5 minutes;
tilt plate to coat evenly with butter.

Meanwhile, in a medium bowl combine eggs, milk, flour, 1 tablespoon
of the sugar and the salt until smooth. Pour batter into plate;
bake for 8 minutes. Reduce heat to 375 F; bake until pancake is
golden brown and sides are puffy, about 8 to 10 minutes longer.

While that is baking, combine blueberries with the remaining 2
tablespoons sugar and the cinnamon in a small bowl.

Remove pancake from oven; scatter bananas over pancake. Spoon
blueberries over bananas. Cut into wedges; serve immediately.

Servings: 2

Christmas Recipes – Pumpkin Pancakes Recipe

2 cups whole wheat biscuit mix
2 TBSP packed dark brown sugar
2 tsp. cinnamon
1-1/2 cups (12-oz. can) evaporated milk
1 tsp. ground allspice
1/2 cup solid-pack pumpkin
2 TBSP vegetable oil
2 eggs
1 tsp. vanilla

In a large mixer bowl, combine biscuit mix, sugar, cinnamon and allspice.
Add evaporated milk, pumpkin, oil, eggs and vanilla; beat until smooth.

Pour 1/4 to 1/2 cup batter (depending on size of pancake desired)
onto heated and lightly greased griddle.
Cook until top surface is bubbly and edges are dry.
Turn; cook until golden. Keep pancakes warm.

Serve with syrup or honey.
