Black Bean and Corn Salad

Black Bean and Corn Salad is a traditional holiday dish for some families. If your family is bored with the same old Green Bean Casserole, try this colorful salad from World Famous Recipes as a side dish for your Christmas table.

 

Leftover Turkey Recipes – Turkey and Stuffing Casserole November 10, 2007

Turkey and Stuffing Casserole

2 cups cooked turkey or chicken
2 cups prepared stuffing
1 can (10 oz.) cream of chicken soup
1 cup sour cream
1/4 lb cheddar cheese
1 small pkg. frozen brocolli

Spread stuffing into a 9×13 in. pan. Combine turkey, soup, sour
cream, brocolli, and 1/2 of the cheese. Pour on top of stuffing. Bake
at 350 for 30 minutes, add remaining cheese and return to oven until
cheese is melted.

Christmas Bread

1 c Nonfat milk
1/2 c Sugar
2 pk Yeast
1/2 c Warm water (105 115’F.)
1/2 c Nonfat egg substitute
1 ts Vanilla
1 1/2 ts Salt
6 c Flour
1 Grated lemon zest
1 c Mixed candied fruit
1 c Golden raisins
1 tb Butter, melted
Powdered sugar
Red candied pineapple

Heat milk and sugar in saucepan to scalding, then cool to lukewarm.

Combine yeast and warm water in mixing bowl, stirring until yeast is dissolved.

Add cooled milk mixture to yeast mixture in mixing bowl.

Stir in egg substitute, vanilla and salt. Beat in 3 cups of flour and lemon zest.

Beat in remaining flour to make soft dough.

Knead in mixed candied fruit and raisins.

Knead about 10 minutes, until smooth and elastic.

Put dough in greased bowl and let rise in warm place until doubled in bulk, about 1 hour.

Punch down. Divide dough in half. Roll first half of dough on lightly floured surface into oval about 1/4″ thick.

Fold in half lengthwise. Place on greased baking sheet. Brush with half of melted butter.

Repeat with second half of dough.

Cover loaves and let rise until doubled, about 45 minutes.

Bake at 375’F. 25 30 minutes, until golden brown.

Let cool to warm.

Sprinkle with powdered sugar and decorate with candied pineapple or cherries.

Makes 2 loaves, or 16 servings.

Christmas Appetizer Recipes – Barbecued Meatballs July 14, 2007

A quick and tasty appetizer idea for Christmas, Thanksgiving, or any other holiday. 

Barbecued Meatballs     

Meatballs
      3 pounds ground beef
      1 (12 ounce) can evaporated milk
      1 cup oatmeal
      1 cup cracker crumbs
      2 eggs
      1/2 cup chopped onion
      1/2 teaspoon garlic powder
      2 teaspoons salt
      1/2 teaspoon pepper
      2 teaspoons chili powder

      BBQ Sauce
      2 cups catsup
      1 cup brown sugar
      1/2 teaspoon Liquid Smoke
      1/2 teaspoon garlic powder
      1/4 cup chopped onion

To make meatballs, combine all ingredients (mixture will be soft) and shape into walnut-size balls. Place meatballs in a single layer on wax paper-lined cookie sheets; freeze until solid. Store frozen meatballs in freezer bags until ready to cook.

To make sauce combine all ingredients and stir until sugar is dissolved.

Place frozen meatballs in a 13 x 9-inch pan; pour the sauce over. Bake at 350 degrees F for 1 hour.

Makes 80 meatballs.

TIMESAVING HELPERS FOR THANKSGIVING & CHRISTMAS

* Make the dough for your bread or rolls a few weeks ahead  of time. Allow the dough to rise fully once, shape it, wrap it well in freezer-safe plastic wrap or foil and freeze. When ready to bake, thaw the dough in the refrigerator. This will usually take a least a few hours or overnight. Set it in a warm place and give it its second rise and bake.  

* If you have a bread machine use it to mix the dough.  Bake the bread the night before the big day and refresh  it in a 350 degree oven for 10 minutes just before serving.
