Cheesy Ham au Gratin Christmas Recipe December 20, 2008

Cheesy Ham au Gratin

2 cup Cooked ham; dice
1 cup Milk
1 cup Boiling water
2 can Mexicorn Whole Kernel corn, drained
1 can Condensed Cheddar cheese soup
1 oz 13-16 oz Pack Hungry Jack Cheesy Scalloped Potatoes

In 3-1/2 to 4 qt crockpot, combine all ingredients; mix welll,
making sure potatoes slices are covered with sauce.

Cover; cook on LOW for 8 to 10 hours or until potatoes are tender.

Baby Potatoes with Caraway Carrot Filling October 1, 2007

Prep: 15 min, Cook: 30 min.

6 lbs. baby new potatoes, unpeeled
2 medium carrots, chopped
1/4 cup sour cream
1 tsp. caraway seeds
2 tsp. fresh chives, chopped
2 tsp. lemon juice
2-3/4 Tbsp fresh chives, chopped, extra

Preheat oven to 350 F. Place potatoes in a steamer basket over boiling
water. Cover pan and steam 10 minutes or until tender. Drain and cool. Add
carrots to steamer basket and steam 10 minutes, or until tender. Transfer
carrots to a blender or food processor and process until smooth. Cut tops
from potatoes and discard. Carefully scoop out flesh from potatoes and
transfer to a bowl. Mash potatoes and add 1/4 of the potatoes to carrot.
Mix well. (Keep remaining mashed potato for another use.) Stir in next 4
ingredients. Spoon carrot mixture into potato shells. Sprinkle with extra
chives and place on oven tray. Just before serving, heat potatoes in oven
about 10 minutes.

 

Outback Steakhouse Aussie Fries September 21, 2007

1 lb. of frozen french fries
1 c shredded Colby or Jack cheese
6 pieces of cooked bacon

Heat oil to 350 degrees. If you do not have a thermostat, make sure
the oil is hot enough so that when you set a french fry in the oil it
cooks immediately. If the french fry sinks to the bottom and barely
bubbles, the oil is not hot enough.

Fry the potatoes in small batches; they are done when they are golden
brown and float to the top of the skillet or fryer. Be sure to drain
the potatoes on paper towels. You can keep them warm in the oven
while the other fries are cooking. When all french fries are done
cooking and are drained, place them on a platter, salt if you like,
and sprinkle on cheese and cooked bacon. Pop these back into a warm
oven until the cheese begins to melt.

Dipping Sauce
16 oz. bottle ranch dressing
2 T. paprika
1 T. cayenne pepper
1 t. dried thyme
1 t. dried oregano
1 t. white pepper
1 t. black pepper
1 T. garlic powder
1 T. onion powder

Combine all ingredients. Refrigerate overnight for the best flavor.
