We have a tremendous selection of recipes this week for your New Years Celebrating delight.  We were surprised to see so few drinks and snacks this week but perhaps participants will be inspired by the actual celebration of New Year’s Eve and will submit lot of recipes for the next carnival.

Microwaved Broccoli with Lemon September 13, 2008

Microwaved Broccoli with Lemon

2 medium-size heads broccoli, about 3 pounds (1.4 kg) total juice and grated zest of 1 lemon

Cut the florets away from the large stems. If desired, peel the stems and cut into 1inch (2.5 cm) lengths. Cut stems in half if very thick.
Arrange broccoli in shallow microwave-safe dish. Cover with plastic wrap, venting at one corner.
Microwave on HIGH for about 6 minutes, until just tender. Just before serving, sprinkle the lemon juice and zest on the broccoli (doing it earlier will turn the broccoli gray).
Per serving: 49 calories (8% calories from fat), 5 g protein, 1 g total fat (0.1 g saturated fat), 10 g carbohydrate, 5 g dietary fiber, 0 cholesterol, 46 mg sodium
Diabetic exchanges: 1/2 carbohydrate (2 vegetable)

 

Butter Crunch Candy October 17, 2007

1 c. light corn syrup
1 c. granulated sugar
1 jar (12 oz.) chunky peanut butter
6 c. crisp rice cereal

Heat syrup and sugar over med. heat
only until sugar is dissolved. Remove
from heat. Stir in peanut butter until
smooth. Mix in rice cereal. Pour into an
8x12" buttered pan. Cut into squares
when thoroughly cooled. Makes about
24 pieces.

 

Sugar Free Cream Cheese Fudge September 6, 2007

Healthy Christmas Recipe

16 ounces cream cheese, softened
2 ounces unsweetened chocolate (squares)
1/2 cup sugar substitute (Equal, Aspartame, Splenda)
1 teaspoon vanilla extract
1/2 cup chopped pecans

In a small mixing bowl, beat the cream cheese, chocolate, sweetener
and vanilla until smooth. Stir in pecans. Pour into 8-inch square
baking pan lined with foil.

Cover and refrigerate overnight.

Cut into 16 squares. Serve chilled.

Christmas Bread

1 c Nonfat milk
1/2 c Sugar
2 pk Yeast
1/2 c Warm water (105 115’F.)
1/2 c Nonfat egg substitute
1 ts Vanilla
1 1/2 ts Salt
6 c Flour
1 Grated lemon zest
1 c Mixed candied fruit
1 c Golden raisins
1 tb Butter, melted
Powdered sugar
Red candied pineapple

Heat milk and sugar in saucepan to scalding, then cool to lukewarm.

Combine yeast and warm water in mixing bowl, stirring until yeast is dissolved.

Add cooled milk mixture to yeast mixture in mixing bowl.

Stir in egg substitute, vanilla and salt. Beat in 3 cups of flour and lemon zest.

Beat in remaining flour to make soft dough.

Knead in mixed candied fruit and raisins.

Knead about 10 minutes, until smooth and elastic.

Put dough in greased bowl and let rise in warm place until doubled in bulk, about 1 hour.

Punch down. Divide dough in half. Roll first half of dough on lightly floured surface into oval about 1/4″ thick.

Fold in half lengthwise. Place on greased baking sheet. Brush with half of melted butter.

Repeat with second half of dough.

Cover loaves and let rise until doubled, about 45 minutes.

Bake at 375’F. 25 30 minutes, until golden brown.

Let cool to warm.

Sprinkle with powdered sugar and decorate with candied pineapple or cherries.

Makes 2 loaves, or 16 servings.
