Christmas Cherry Ham Sauce April 20, 2009

Christmas Cherry Ham Sauce

1 c. crushed pineapple, undrained
1/4 c. brown sugar
2 tbsp. butter
2 tbsp. lemon juice
1/2 tsp. grated lemon rind
1/2 tsp. red food coloring
1/8 tsp. salt
1 c. canned, drained, pitted red sour
cherries (save juice)
2 tbsp. corn starch
1/2 c. cherry juice

Into a saucepan mix together pineapple, sugar, butter, lemon juice, lemon rind, food coloring and salt. Heat slowly. In small bowl mix 1/2 cup canned cherry juice and corn starch, stir until smooth. Add to the fruit mixture. Stir constantly until sauce thickens. Lower heat and simmer 3 to 4 minutes. Serve hot over baked ham or broiled ham slices. Makes about 2 1/2 cups sauce.

 

Holiday 5 Minute Eggnog Pie March 26, 2009

5 Minute Eggnog Pie

2 boxes instant vanilla pudding (small boxes)
1 quart (4 cups) eggnog
2 tablespoon pumpkin pie spice
8 oz tub Cool Whip, divided
1 deep dish (or 2 regular) graham cracker pie crust

In large mixing bowl, use a whisk to mix eggnog, pumpkin pie spice,
and vanilla pudding mix. Mix well for 2 minutes, then fold in 4 oz
(half tub) of Cool Whip, mix well. Pour into pie shell/s. Put in
refrigerator and let set for 2-4 hours. Serve with remaining Cool
Whip

Christmas Berry Jelly March 17, 2008

Christmas Berry Jelly

2 cups apple juice
1/4 cup lemon juice
1/2 cup cinnamon imperials (red hots)
3/4 cup water
1 teaspoon red food coloring
1/4 teaspoon Mace
1 box powdered pectin
8 whole cloves
1 stick cinnamon
4 cups sugar

Prepare home canning jars and lids according to manufacture’s instructions. Jars must be covered with water and boiled 10
minutes to sterilize. Combine apple juice, lemon juice, red hots, water, food coloring, mace and pectin. Tie cloves and
cinnamon stick in a spice bag. Add spice bag to juice mixture. Bring mixture to a boil, stirring constantly. Add sugar, stirring to dissolve. Bring to a rolling boil. Boil hard for 2 minutes. Remove from heat and skin foam, if necessary. Carefully ladle hot jelly into hot jars, leaving 1/4″ head space. Wipe jar rim clean. Place lid on jar with sealing compound next to glass. Screw band down evenly and firmly. Do not use excessive force. Process jelly 5 minutes in a boiling water canner.

INGREDIENTS
1/2 cup Dried Oatmeal
1/3 cup Glitter
1 Heartfull of Christmas Hope

In a bowl, Mix together the Oatmeal
And Glitter. Fold in Christmas Hope
Put into a seal top plastic bag or if you
Use a baggie, use ribbon to tie it shut.

 
Tell the kids:
On Christmas Eve, sprinkle Magic Reindeer
Food on your lawn before “Bedtime”
The Glitter will “Shine in the Moonlight”
And lead Dear Santa to your house before dawn.
The “Smell of Oats” will lead the
Reindeer to your Rooftop.
The “Christmas Hope” and “Magic Reindeer Food”
Guarantee Dear Santa will be there.(If you have little ones that you think might

Christmas Recipes – English Christmas Cookies December 18, 2007

ENGLISH CHRISTMAS COOKIES

2 c. brown sugar

2/3 c. shortening

2/3 c. milk

3 eggs

1 tsp. salt

3 tsp. baking powder

1/2 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. cloves

1 c. raisins

1 c. pecans

Cream the shortening, adding 1 cup sugar, gradually. Beat the eggs

very light and the remaining sugar and combine the mixture. Sift 2

cups flour with baking powder, salt and spices. Add alternately with

milk. Add the fruit and nuts dredged with flour and enough flour to

make a stiff dough. Drop by teaspoons on greased baking sheet. Bake

in moderate oven until golden brown.
